I have something using up disk space and can't track it down...

This doesn't add up, I think something left behind a giant mess of data when I uninstalled it or something. I've tried going through a file browser to track it down but had little luck. Feel like I might just have to wipe the tablet and start over fresh.

Go through the volume with a file manager like Astro. It will let you see what's taking the space.

How much do you think you have lost?
Looking at the photo of your system usage, it seem to be about 4 MB

The problem is likely the GPS receiver data logging "bug" described here: SD Card. This affects all stock ICS Iconias, and there are several threads in these forums describing the problem. Note that a factory data reset will temporarily clear the logging data and restore the wasted space, but if other measures described in that post are not taken -- i.e., turning off the GPS receiver, or disabling the logging -- then the problem will continue to occur.

You system will not let you see anything under the /data directory unless you have root privilege on the device. The directory will appear empty if you don't have permission to view the contents.

The JPEG image shows you using about 2GB out of the total 5.4GB. It also shows about 1GB available, bringing the total of used+available to 3GB, so you appear to have approximately 2.4GB that is not accounted for. That space is probably being used by GPS receiver logging files under /data/gps, which a Factory data reset should clear.

Note also that the 5.4GB total that you see is the amount of user space available on an 8GB system. The OS uses about 2.6GB of the 8GB storage chip, leaving the 5.4GB of total user space that you see at the top of your storage screen.
