Yes you can root it, but I would recommend freezing and hiding the apps instead of deleting them. To receive any update you will have to revert back to stock so best thing to do is to make a back up of the stock ROM if possible.

Ugh ok, that's what I was afraid of. I just want to clean up some space, any bit helps on an 8GB system, but probably not worth the hassle if I want to get updates in the future.
Is really not a big deal if you have the know how. The only problem with deleting deleting stock apps is that when an update come in, it searches for those apps. If even one of them it's missing it won't install or it will give you an error. Also, some of them are essential for the system to work properly. That's why I never recommend getting rid of them.
