You probably should, you might run into problems if you modified anything on the system.

Never accept an OTA while rooted.

You can install 3.2.1 or the official ICS I posted, through the stock recovery over your root, but you will lose root.

Honestly the only thing I reverted was my memory swap, I tried unrooting I couldn't seem to for whatever reason, so I went ahead with the update and prayed it would be OK. And it was fine, I used that method posted earlier, the one thing was until I found the method to root in ics I had superuser privileges but wasn't rooted cause the other features weren't there...

I tried unrooting my A100 once. It couldn't unroot on Honeycomb.
Although I've seen a number of methods posted in different forums, I have never read a report of anyone successfully unrooting a Honeycomb A100.

I did the update from Gen2 3.2 to Gen1 3.2.1. I never checked to see if I remained rooted at that point.
From there, I immediately got the OTA to ICS 4.0.3. At this point, I am no longer rooted.

I'd like to re-root, but I'm on a Mac and have yet to read of anyone having rooted ICS without Windows.

Well on you Mac you can run windows as long as its a Intel based Mac.. you should look into installing windows on you Mac, and all would be good!
